French Onion Soup for the Soul

Chef Nicole Roarke prepares a fine “five onion” French onion soup, bracing and satisfying, with deeper flavors than usual. And her rich, New England-style clam chowder also is worth the visit.

My French Onion Soup Recipe

Prep Time: 15 mins
Cook Time: 30 mins
Yields: 18

Ingredients

  • 2 Cups - Chicken Stock
  • 3 Brown Onions
  • 1 Bread Stick
  • 2 Tbls of Balsamic Vinegar
  • Salt & pepper

Method

  1. Brown off the onions until carmelised
  2. Add Balsamic Vinegar to deglase
  3. Season to taste with salt and pepper
  4. Serve with crusty croutons
