There are some exciting things happening in the near future at JA Heneghan’s Tavern. Within the next few months we should be serving grass-fed beef that is coming from a Heneghan farm. As most of you may know, JA’s is owned by three of the Heneghan boys, Kevin, Jack, and Jim. Another brother, Bart, lives up in Coxsackie, NY and owns a farm where he has been raising grass-fed cattle for a couple of years now. Bart has eleven children (Heneghan’s are always looking for cheap labor) which once resulted in my father saying that Karen and I were “slackers” with our paltry output of only 5 children. (For those keeping score Kevin has 9, Bart 11, Steve 4, Jack 5, Eileen 6, and Jim 3 for a grand total of 38 grandkids for Babe, otherwise known as Grandma). Chef Nicole has already sampled some of the beef and pronounced it excellent. Grass-fed cattle is a completely different way of raising cattle that is environment friendly and produces a leaner cut of beef. Bart’s oldest son John is running the cattle operation and they procured a specific breed of cow that responds well to the grass diet to produce excellent meat. The Heneghan farm is now also being prepared to grow some of the produce that will be used at JA’s in the future. More details on these exciting developments in the near future!!
